Whether you are tired of eating it or not, zucchini plants are hitting their peak of production right about now. Even if you only have one or two zucchini plants in your garden, this summer squash is probably taking over–both out in the garden and in the kitchen as these veggies begin piling up on the counter!
Make the most of this abundance by trying out different recipes that utilize lots of zucchini. Here is one idea for a tasty, zesty zucchini dish!
Thyme Zucchini
2 zucchini, medium-sized, cut up
1 T. olive or vegetable oil
1-2 tsp chopped Thyme
2 T. grated Parmesan cheese
Salt and pepper, to taste
Squirt of lemon juice
-Heat oven to 350F.
-In a baking dish, combine zucchini pieces with oil, Thyme, salt and pepper, cheese, and lemon juice.
-Bake for 35-40 minutes
